Overview

Think of it as a crumpet the size of a pizza. Imagine.

Ingredients

Method

  1. Pour deflated starter into a mixing bowl, weigh it, and divide by two.
  2. Add flour up to 200g, factoring in the starter.
  3. Add water to 120% hydration, factoring in the starter.
  4. Add salt and sugar.
  5. Mix well and leave to rest for thirty minutes.
  6. Add baking powder.
  7. Gently heat a large pan and grease with some vegetable oil or butter over low heat.
  8. Pour in the mix.
  9. Once the top has set, turn off the heat.
  10. Toast under a grill before enjoying.
