Overview
This crumpet was invented on the happy day of King Charles III’s Coronation.
Throw away your crumpet rings. This bad boy is the size of a frying pan.
Think of it as a crumpet the size of a pizza. Imagine.
One day I will start a cafe selling these and only these.
Ingredients
- 120% hydration batter
- 200g flour (makes one crumpet)
- Half a teaspoon of salt
- Half a teaspoon of baking powder
- One teaspoon of sugar
Method
- Pour deflated starter into a mixing bowl, weigh it, and divide by two.
- Add flour up to 200g, factoring in the starter.
- Add water to 120% hydration, factoring in the starter.
- Add salt and sugar.
- Mix well and leave to rest for thirty minutes.
- Add baking powder.
- Gently heat a large pan and grease with some vegetable oil or butter over low heat.
- Pour in the mix.
- Once the top has set, turn off the heat.
- Toast under a grill before enjoying.
